how long is the belt? i put a belt on that was 108 3/4 long and the belt would squeal when the A/C was off.

This belt is 108" long, it sounds like maybe the one you installed is just a tad too long.

2002 Damon Intruder 350. W22 chassis with 8.1 Chevy V8. I've been told this belt is the correct one, is it? Also, any additional info on how to remove/replace it as there is only access from under the engine.

This is the correct belt for your W22. To replace, install a 3/8" drive ratchet into the belt tensioner and rotate the arm to release tension and slip the belt off. For installation, route the belt over all the pulleys expect the tensioner arm pulley. Using the 3/8" drive ratchet, relieve tension on the tensioner and slip the belt back over that pulley and slowly release the tension. Attached is a diagram of the belt routing:
